How many emoji are there, really?

The Unicode Standard defined roughly 3,790 emoji as of Unicode 15.1 (2023), and the set grows by a few dozen each year through the Unicode Consortium's annual release. That includes skin-tone and gender variants, which is why "just pick one at random" is a bigger lottery than it looks. This picker draws from a curated, widely-supported subset grouped into Smileys, Animals, Food and Fun so you don't land on an obscure symbol that renders as an empty box.

Why your emoji looks different on a friend's phone

An emoji is a single Unicode code point, but each platform draws it with its own artwork. Apple, Google (Android), Microsoft and Samsung all have distinct emoji fonts, so the "grinning face" you copy may look friendlier or more manic on someone else's screen. Famous mismatches have caused genuine miscommunication. The code you copy is universal; only the picture changes.
